Matcha White Chocolate Chip Cookies
Chewy, vibrant, and just sweet enough. Vegan and gluten-free.
- 2 cups ultra-fine almond flour, packed
- 1 tbsp matcha powder
- ½ tsp baking powder
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- ½ tbsp vanilla extract
- ⅓ cup mini white chocolate chips
- Preheat oven to 325°F. Line a baking sheet with parchment.
- Whisk together almond flour, matcha, and baking powder in a bowl.
- Stir in maple syrup, melted coconut oil, and vanilla until a sticky green dough forms.
- Fold in mini white chocolate chips.
- Lightly grease hands with coconut oil. Scoop 2 tbsp of dough, roll into balls, and place on sheet.
- Gently press each ball flat, leaving a slight dome in the center.
- Bake 12-15 min until edges are set and tops feel firm. They firm up as they cool.
- Rest on the tray for 5 min, then transfer to a cooling rack.
✨ Mini white chocolate chips are the move here - they distribute more evenly through the dough and you get chocolate in every bite.
Thai Salmon Red Curry
Rich, fragrant, and weeknight-fast. The coconut milk does the heavy lifting.
- 2 salmon fillets, skin off
- 1 can (400ml) full-fat coconut milk
- 2-3 tbsp red curry paste
- 1 red bell pepper, sliced
- 1 yellow onion, thinly sliced
- 2 cups broccoli florets
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fish sauce (or soy sauce)
- 1 tsp brown sugar
- Juice of 1 lime
- Fresh basil or cilantro to finish
- Jasmine rice to serve
- Season salmon with salt and pepper. Sear in a hot oiled pan 2 min per side until golden but not fully cooked. Set aside.
- In the same pan, soften onion over medium heat, 3-4 min. Add garlic and ginger, cook 1 min.
- Add red curry paste and stir for 1 min until fragrant and deep red.
- Pour in coconut milk. Stir to combine, bring to a gentle simmer.
- Add bell pepper and broccoli. Simmer 5 min until just tender.
- Nestle salmon back into the curry. Simmer 3-4 min until cooked through.
- Season with fish sauce, brown sugar, and lime juice. Taste and adjust.
- Finish with fresh basil or cilantro. Serve over jasmine rice.
💡 Add a spoonful of peanut butter into the sauce for extra body and a subtle nuttiness. Leftovers are even better the next day.
Oreo Protein Pancakes
High protein, zero guilt, maximum cookies-and-cream energy.
- 1 cup Kodiak Cakes Power Cakes mix
- ¾ cup milk of choice
- 1 egg
- ½ tsp vanilla extract
- 4-6 Oreos, halved or roughly broken
- Butter or cooking spray for the pan
- Whipped cream and extra Oreos to top
- Whisk together Kodiak mix, milk, egg, and vanilla. Let batter rest 5 min - this makes them fluffier.
- Heat a non-stick pan or griddle over medium-low. Lightly grease.
- Pour about ⅓ cup batter per pancake. Cook until bubbles form on the surface and edges look set, about 2-3 min.
- Press Oreo pieces into the uncooked side just before flipping - they caramelize slightly against the pan.
- Flip once and cook 1-2 min more until cooked through.
- Stack, top with whipped cream and crushed Oreos. Serve immediately.
🍪 The Oreos go on right before you flip - not in the batter. That's what gives you the crispy, caramelized cookie crust on the outside.
